This vegetable is fast growing that can be harvested as Yu Choy (stem and leaf) or Yu Choy Sum, (stem, leaf and flower buds.) The stems are short and thick with shiny green leaves and it is tolerant to Downy Mildew. Good for sowing in late summer and fall season. Prepare fertile, well-drained soil. Sow seeds in a sunny location in spring after last frost, or summer/fall. Keep soil moist. Fertilize as needed. Yu Choy Sum is very sensitive to temperature. Exposure below 50-55°F may result in bolting. Optimal growth temperature range is 60-80°F. Direct Sow - Sow seeds into have been amended with a 2-inch layer of compost. Plant seeds 1/4 to 1/2 inch deep. Make sure you plant three seeds every 12 to 18 inches. Sow seeds in early spring or late summer. In Mediterranean climates, this means March or April for spring crops and August or September for fall crops. Sow new rows of choy sum every two or three weeks so that you'll have a consistent supply during the cooler months. Set shade cloth over rows sown in late spring. Thin the choy sum seedlings to 12 to 18 inches apart from one another in all directions. Make sure seedlings are protected from wind, heat and drought. Water the choy sum patch at least once a week, checking during the week to ensure that the soil remains moist. Give the patch supplemental watering during dry spells. Avoid wetting foliage when watering the soil around choy sum. Also, refrain from using sprinklers or watering at the end of the day when the leaves won't have the chance to dry in the sun. Sprinklers or careless watering methods can lead to fungal diseases. Side-dress plants with compost three weeks after sowing seeds. Set compost in rings around individual plants, or in narrow bands several inches in front of each row. In either case, use a 1-inch layer of compost. Cover plants with shade cloth in the afternoon during heat spells. As a cool-season vegetable, choy sum prefers temperatures between 60 to 70 degrees Fahrenheit. Harvest choy sum by cutting off the entire loose bunch of leaf stalks at the base of the plant when it reaches the large leaf stage but before its yellow flower buds have flowered.
