This series provides instructional text books on the subject of the culinary arts. Specifically, these two volumes address Soup, Meat, Poultry & Game, Fish & Shellfish (Volume 3), and Salads & Sandwiches, Cold & Frozen Desserts, Cakes, Cookies & Puddings, Pastries & Pies (Volume 4). Volumes contain general principles of procurement, preparation and serving the respective categories of dishes and foods, numerous recipes and cooking instructions for specific dishes and components of dishes, various ancillary information about said dishes and foods (such as nutrition information, cuts and parts of livestock and butchery instructions, common names and technical identification of cookware, portions & measurements, etc.). Each section closes with a page of examination questions for review or testing, and each volume contains a topical index at the end. CONDITION for both is VERY GOOD+, no dust jackets, as issued. Some staining and superficial wear present to exteriors of both volumes. Blindstamped boards are scuffed but remain in good condition nonetheless. Corners and edges only slightly worn and bumped. Gilt titles to spine are rubbed but remain present and legible. Books appear to be completely unmarked within; no names or nameplates, no margin notes, underlining or other markings within text blocks observed. Boards are straight and in good condition as described above. Bindings are quite sound and square. Text blocks are generally very nice with clean, crisp pages; no missing or torn leaves or other damage noted internally. About ten pages in the latter half of volume 4 (cakes and cookies section) exhibit some stains and moderate soiling, but nothing that affects text or illustrations.
